Red Gem Zesty Middle Eastern Potatoes

Ingredients:

  • 24 oz. Red Gem potatoes, halved
  • 2 c. plus 1 tbsp. vegetable oil, divided
  • 1 medium yellow onion, sliced thin
  • 2 tbsp. Za’atar seasoning (oil-based preferred) *
  • 1 clove garlic, minced
  • ¼ tsp. coarse Kosher salt
  • ½ c. Greek-style yogurt
  • 1 tsp. fresh lemon zest
  • 1 tsp. freshly squeezed lemon juice
  • 1 tbsp. fresh parsley leaves, chopped
  • 1 tsp. fresh dill weed, chopped
