Preheat oven 400-degrees. In a medium pan, cook bacon over medium heat until crisp. Transfer bacon to paper towels to drain. When bacon is cool, crumble and set aside.
Carefully transfer bacon drippings to medium glass casserole dish. Add potatoes, salt and pepper. Cover and roast potatoes for 20-25 minutes, or until desired tenderness.
While potatoes are roasting, combine sour cream, green onions and bacon. When potatoes are done roasting, uncover and top with sour cream mixture. Serve hot.
